Red velvet cookies
Ingredients
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 tablespoons red food coloring
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
What to do
- Cream the butter and sugar together in a bowl until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla and food coloring. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients in two batches, stirring until just combined. Stir in the buttermilk until the dough is smooth.
- Chill the dough for at least 1 hour (or up to overnight). Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Roll the dough into balls, using about 2 tablespoons of dough for each. Place the dough balls on the prepared baking sheet and bake until golden brown, about 10 minutes. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
