Avocado pasta
Ingredients:
- 8 oz. spaghetti
- 2 ripe avocados
- 1/2 lemon, juiced
- 2 garlic cloves, minced
- 1/4 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
What to do:
- Cook spaghetti according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, cut the avocados in half and remove the pit. Scoop out the flesh and place it in a blender or food processor.
- Add lemon juice, minced garlic, fresh basil leaves, Parmesan cheese, salt, and pepper to the blender/food processor. Blend until smooth and creamy.
- In a large skillet over medium heat, pour the avocado sauce and cook for 2-3 minutes, stirring constantly.
- Add the cooked spaghetti to the skillet and toss with the sauce until everything is fully coated.
- Serve hot, garnished with additional Parmesan cheese and fresh basil.
