Avocado pasta (recipe)

 Avocado pasta

Ingredients:                              

  • 8 oz. spaghetti
  • 2 ripe avocados
  • 1/2 lemon, juiced
  • 2 garlic cloves, minced
  • 1/4 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

What to do:

  1. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, cut the avocados in half and remove the pit. Scoop out the flesh and place it in a blender or food processor.
  3. Add lemon juice, minced garlic, fresh basil leaves, Parmesan cheese, salt, and pepper to the blender/food processor. Blend until smooth and creamy.
  4. In a large skillet over medium heat, pour the avocado sauce and cook for 2-3 minutes, stirring constantly.
  5. Add the cooked spaghetti to the skillet and toss with the sauce until everything is fully coated.
  6. Serve hot, garnished with additional Parmesan cheese and fresh basil.
